Special Herbs started as an experiment years ago and has become one of their favorite annual releases. Following no stylistic framework, the beer is instead freely structured with a focus on the interplay of ingredients. Spelt, orange, lemongrass, hyssop, Sichuan peppercorn, and a mix of well used wine and spirit casks form the core, creating a profile that draws from saison, kombucha, gruit, amaro, and other herbal beverages. This 2020 vintage shows a lovely aromatic profile of candy and citrus.
